I’ve had this recipe on my radar for a while now. I finally got around to making it for a Staff Appreciation lunch at my son’s school a few week’s ago and I barely got a bite of it before it had disappeared! It always makes me nervous serving something before I get a chance to try it, but apparently I had nothing to worry about with this one. I decided to make it again to take to my parents for Easter dessert. I finally had a full piece to myself (with the exception of bites my daughter stole) and it really is wonderful. Dense, moist and full of amazing flavor. Perfect with coffee for breakfast, an afternoon treat with tea or dessert with a glass of milk :) This one’s a keeper.

Recipe via A Spicy Perspective:

Ingredients:

For the Blueberry Cake:

1 cup unsalted butter, softened
2 cups sugar
3 large eggs
1 tablespoon vanilla extract
2 3/4 cups all purpose Gold Medal Flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cup buttermilk
Zest of 2 lemons
1 pound fresh blueberries

For the Buttermilk Glaze:

3 tablespoons buttermilk
1 cup powdered sugar

For the Oat Crumble Topping:

2 tablespoons butter
2 tablespoons brown sugar
3 tablespoons flour
2 tablespoons oats
2 tablespoons sliced almonds

Directions:

For the blueberry cake: Preheat the oven to 325 degrees F. Spray a bundt pan with non-stick cooking spray and sprinkle lightly with flour. In the bowl of an electric mixer, cream the butter and sugar together until light and fluffy. Then beat in the eggs and vanilla. Mix the flour, baking powder, baking soda, and salt in a separate bowl. Turn the mixer on low and slowly add the flour and buttermilk, alternating each, until all incorporated. Finally beat in the lemon zest before turning the mixer off. Use a spoon the stir in half the blueberries.

Pour the batter into the prepared bundt pan and sprinkle the remaining blueberries over the top. Bake for 60-80 minutes, until a toothpick inserted into the center comes out clean. Remove the cake from the oven and allow it to cool for at least 20 minutes before flipping out onto a cooling rack. DO NOT try flipping the cake any earlier than 20 minutes, or the cake will stick. Promise! Waiting 30+ minutes is safer.

Once the cake is cooling on the rack, mix the oat crumble. Add all the ingredients to a small bowl and pinch with your fingers to blend the ingredients and break into small pieces. Sprinkle the mixture over a baking sheet and bake in the heated oven for 5-10 minutes. Cool on the baking sheet before proceeding.

For the glaze, whisk the buttermilk and powdered sugar in a small bowl. Drizzle the glaze over the cake and immediately sprinkle the oat crumble over the top of the cake before the glaze dries.

I hope you all enjoyed a wonderful Easter with your families yesterday. My kids seemed to be on overdrive from 6:50am on and my husband and I continue to find candy wrappers laying randomly around the house! We started off the day with a wonderful sermon at church, followed by a trip to the Arboretum on campus at PSU to let the kids run around while we shot some pics of them and spent the rest of the day with family enjoying an Easter feast. It was a beautiful day, albeit a bit windy, but the sun was shining so I was happy!

Maxi dresses and pregnancy are a match made in heaven. I don’t have all that much time to take advantage of them, but for any of you that will be pregnant throughout the coming summer months, make sure they stay at the top of your list. Pregnant or not, you really can’t go wrong with them. Forgiving and slimming, they’ll most certainly be a go-to for me all summer long!

High Five for Friday

Happy Friday! Well, we have made it into April, I managed to avoid being the brunt of any April Fool’s jokes, and spring is fighting to get here! I’m battling a sore throat at the moment but am banking on it dissipating by this weekend so that I can enjoy Easter weekend with our family. I hope you all do the same!

Here’s a quick look into my week:

1) We tackled our Easter eggs. I always have grand ideas of trying something new, but I suppose a little rubber band detail will have to do for now!

2) Sometimes all it takes is a new hat to make me stop and see how quickly he’s growing up!

3) There hasn’t been a moment at home this week that this little one didn’t have on a tulle skirt, princess shoes or  something adorning her head. I can’t get enough.

Long Cardigan

I’m slowly quickly running out of cloths that will fit over my ever-growing bump. Here I turned to a tunic I typically wear as a swimsuit coverup and a long cardigan to help elongate the body. Illusions work whether you’re pregnant or not! I’ve had this cardigan for a while now, but I link to a few below that I love. On this particular day, I was also told by my grandmother while we were out shopping for kid’s clothes, that I should probably invest in some new clothes for myself as she pointed out all of the rips in my jeans :) Ohhh, the sacrifices we makes as mothers, lol!

Packing the Hospital Bag

I haven’t officially started packing my bag for the hospital yet, but I figured I would put this post together as a resource I can turn to as soon as I get my act together! When it came to having my first child, I think I spent more time researching what to take to the hospital than the time I spent actually in the hospital! I also now realize that although I may be on lock-down at the hospital, my husband will not be and he’ll be able to run out for anything I find myself missing. Overall, I like to pack things that will help me feel as comfortable and fresh as possible (as many of you know, birthing a baby leaves you feeling just the opposite!). I’ll bring a few things for the baby, including a handful of kimono tops (which your hospital likely gives out as well) and bottoms because babies ruin more clothing in a day than I like to count. I’ll also include a sweet outfit for her trip home…which she’ll likely ruin as well ;)

1) Weekender: A weekender bag seems to be the perfect size to hold everything you need for your hospital trip. I have this one from Anthropologie which is extra roomy, I love it.

2) Comfy Clothes: I ordered this t-shirt from ILY Couture, the same place I got my ‘wifey’ and ‘preggers’ tees. And these jersey sweats pair perfectly with it, not to mention the comfort level. I’m also throwing in my Wilfred sweater (that wears like a sweatshirt) because you can never predict the temperature in hospitals. That in addition to out of whack hormones! This category also includes comfortable undies (ie granny underwear). I stocked up on some at TJMaxx that were inexpensive but will feel like heaven during those postpartum days. I don’t even want to think about bikini underwear!

3) Footwear: I always like to have my slippers and a pair of flip-flops for the shower.

4) Pillow: Being pinned to a hospital bed for somewhere around 2 days is less than appealing, but having your own pillow can make a world of difference. Just don’t leave it behind when you leave!

5) Beauty: I’ll most definitely be including my skincare products, shampoo, a touch of product and my tinted moisturizer to feel somewhat put together and presentable for visitors. Although we all know they won’t be there to see me ;)

6) Chapstick: This one gets a category all to itself, because this is something you do not want to forget. Dry lips are inevitable!

7) Lansinoh: If you’re nursing, you’ll want this! Oh and a nursing bra, that’s a must.

8) Snacks: Hospital food is, well, hospital food. I always seem to crave fresh fruit in the time after delivery. Kind bars are also perfect to satisfy hunger, but I’m willing to bet they end up being more for my husband than myself ;)

9) For the Baby: This is the take home outfit that my daughter, Madelyn wore home. I have yet to decide if I’ll be getting baby girl #2 a different outfit or letting her start borrowing from her big sis! I’ll also throw in some kimono tops/onesies for her. Their little heads always seem so fragile as they just come into the world and pulling tops off and on is much more difficult than being able to wrap them in a kimono piece. Oh and itty bitty socks to keep her warm! Some people also throw in their Boppy, which is a must at home, but in the hospital I’ve always been fine propping them up with pillows.

10) Other essentials: I didn’t show a few obvious essentials, but you’ll certainly need your phone, charger, camera, toothbrush, toothpaste etc.

 

It’ll be a whirlwind for sure, but at least feeling prepared allows you to enjoy your new little miracle as best you can :)

Carrot Cake Cookies

On every major holiday I’m fortunate to not be the one in charge of the family meals. Talk about pressure! I’m thankful for my mother, grandmother and mother in law who always graciously take the reigns and prepare delicious meals for our family. My role typically comes into play for dessert which I’m always more than happy to tackle. This Easter I wanted something festive and fun. Last year I enjoyed making these sugar cookies which were great but very time consuming. This year I also went the cookie route, but chose to try a carrot cake cookie with a cream cheese frosting and a simple carrot decoration. Don’t give me credit for any of the creativity, all thanks goes to Cooking Classy for this recipe. I’m just here to prove that your average baker can tackle this with ease. Oh, and they’re delicious in case I forgot to mention that ;)

Carrot Cake Cookies via Cooking Classy:

Ingredients

1 1/2 cups (213g) all purpose flour
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 tsp ground cinnamon
1/4 tsp ground ginger
1/8 tsp ground nutmeg
1/2 cup (4 oz) unsalted butter, softened
1/2 cup (106g) granulated sugar
1/4 cup (55g) packed light-brown sugar
1 large egg
1 tsp vanilla extract
1 cup (118g) finely grated carrots
Chopped pecans or cinnamon, for decoration (optional)

Frosting
5 oz cream cheese, softened (don’t over-soften it)
6 Tbsp (3 oz) butter, softened
1/2 tsp vanilla extract
2 cups (220g) powdered sugar

 

Directions

Preheat oven to 350 degrees. In a mixing bowl whisk together flour, baking soda, baking powder, salt, cinnamon, ginger and nutmeg for 20 seconds, set aside.

In the bowl of an electric stand mixer fitted with the paddle attachment, blend together butter, granulated sugar and brown sugar until creamy. Blend in egg and vanilla extract. With mixer set on low speed, add half of the flour mixture and mix just until combined, then mix in carrots, then mix in remaining 1/2 of the flour mixture just until combined. Scrape sides and bottom of bowl with a spatula to make sure everything is properly incorporated.

Scoop dough out with a medium 1 1/2 Tbsp cookie scoop and drop onto baking sheets lined with silicone liners, spacing cookies 2-inches apart. Bake in preheated oven until set (they should still be soft to the touch though), about 11 – 12 minutes. Cool on baking sheet several minutes then transfer to a wire rack to cool. After 5 – 10 minutes of cooling on rack finish cooling completely in an airtight container so they don’t dry. Once cool, frost with cream cheese frosting and top with pecans if desired.

For the frosting:
In a mixing bowl fitted with the paddle attachment, whip together butter and cream cheese until light and fluffy. Mix in vanilla and powdered sugar and whip again until light and fluffy (if slightly runny chill in freezer about 5 minutes then mix one last time). If doing the carrot decoration set aside about 2 Tbsp to ting green and 2 Tbsp to tint orange.

So this post started out as your basic ‘white tee, jeans and sneaks’ type of outfit which I was inspired to wear thanks to Pink Peonies, who also just so happens to be pregnant. But it turns out our weather decided to hover around 30 degrees again and I therefore had to add the necessary layers (and I probably should have added even more!). It’s true, I do love to layer, and I’m happy with the way the outfit fell together, but 30 degrees? Come on now.

High Five for Friday

After being out of town for four days last week, I spent most of this week playing catch-up on life. Catch-up in slow motion that is, because my body doesn’t seem to be moving as quickly as I’d like it to these days. That’s expected, I realize, but it doesn’t make the rest of the world slow down…or even just my kids for that matter ;) Regardless, the weekend is nearly here so I think we should be back on track shortly. I hope you all enjoyed your week!

3) I remember getting sentimental when I was nearly due with this girl and tearing up as I realized my son would no longer be my baby, or the only child for that matter. I now catch myself staring at this sweet little lady and my heart hurts thinking that she’ll no longer be the ‘baby’. Granted, her self-proclaimed independence during this past year should be enough to reassure me that she’ll be okay, but it’s still change. And change isn’t always easy…for me at least.

4) Since the snow has just about disappeared, I figured it was alright to break out a bit of our spring decor.

5) Has everyone heard about the Lily Pulitzer for Target line coming in April? It was announced a few months ago, but I’m excited it’ll be arriving soon. Apparently the loyal fans of the line weren’t exactly thrilled about this, but I for one am happy to see it come to us at more than reasonable prices. This dress is one of my favs!

Just a little inspiration for your Thursday as I share some of my favorite tops that are all too perfect for spring as they make great use of flowers, ruffles and pastels. Soft, sweet and feminine which can always be enhanced with some white denim or toned down with good old boyfriend jeans. Take your pick, you can’t go wrong!

Prego Peplum

One style I was sad to step away from during pregnancy was peplum. I love the femininity it adds to a top and how flattering it is to most any shape. You can see how I styled the look previously here, here and here. Then I ran into this tank from Gap and it was such a refreshing site to see! During the month and a half (or so) that is left in this pregnancy, this piece will certainly be getting its wear. And don’t worry, for the majority of you who are not currently expecting, in true Gap style, they also offer it in regular women’s sizing…in a multitude of colors nonetheless! It’s a perfect piece to add to your closet for this spring/summer.
