A Night Out

This past weekend we celebrated my sister-in-law with a mini-bachelorette party. Her wedding is a mere 6 weeks away and we’re all extremely excited for it. She has a great group of girlfriends and I think our laughter filled the room the entire evening. After gathering at one of the ladies’ homes, we headed to a Hibachi grill and had an amazing evening. After stressing for a moment about what to wear to such an event at 27 weeks pregnant, I knew throwing on this sleek tuxedo blazer, some skinnies, and breaking in these silver pumps that I plan on wearing for her wedding, were the perfect option.

High Five for Friday

Happy Friday! It’s been a pretty frigid week around here, but moving into February, I know spring is on the way….eventually. As for the fam, I had a check-up this week and baby Z is doing well and right on track. Big brother is losing teeth and starting to (slowly) read books on his own and big sister is on the road to being potty trained. I have heard so many people say that girls are easier to train than boys. I beg to differ. Jack was trained in one quick weekend. He literally wet his pants one time in the process and that was that. Miss Madelyn, on the other hand, has a mind of her own. I think our extreme celebrations (ie her brother and I jumping around like maniacs every time she uses the potty and stays dry during nap-time) are starting to win her over. Stay tuned, she’s a work in progress!

2) Nearly 27 weeks, closing in on the third trimester and trying to get my feet up every once in a while. Potty training a 2.5 year old is certainly keeping me on my feet more than I’d like, but it needs to be done!

3) I love dressing up girls. And I love when she gets a kick out of her clothing!

4) My favorite kind of shopping is finding little gems when I’m not looking for them. We all know when you are looking for them, you never find them! These cute cards (which are inspiring me to send some out of the blue hello’s) and passport case were snagged at Home Goods this week. Now I just need some plans that involve putting my passport to use again ;)

Well ladies, Valentine’s Day is nearly upon us. I rounded up a few goodies that have recently caught my eye. I figure if I have it on here my husband may get the hint ;) Feel free to forward it on to your significant other as well. Subtle hints tend to work and they can still take the credit ;) And for all of my single lady friends, there’s never any harm in treating yourself to a little something!

Valentine Cookies

Valentine’s Day is a classic holiday to share sweets with those you love. There are a million treats and candies to choose from, but you can never go wrong with a classic cookie. This recipe adds some pudding mix to keep the cookies soft and chewy…and delicious. And the M&M’s add the perfect flair for the holiday. As I was eating them I couldn’t help but wish I had used peanut-butter M&M’s. Maybe a pregnancy craving? If you try them that way, let me know how they turn out!

Here’s the recipe via Averie Cooks:

M&M Chocolate Chip Cookies:

INGREDIENTS:

3/4 cup unsalted butter, softened (1 1/2 sticks)
3/4 cup light brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 cup instant vanilla pudding mix (not sugar-free and not ‘cook & serve’), OR use 2 teaspoons cornstarch in place of pudding mix
1 teaspoon baking soda
pinch salt, optional and to taste
3/4 cup semi-sweet chocolate chips
3/4 cup milk chocolate M&M’s mixed into the dough + about 1/2 cup for placing on top of dough mounds

DIRECTIONS:

To the bowl of a stand mixer fitted with the paddle attachment (or large mixing bowl and electric mixer) combine the butter, sugars, egg, vanilla, and beat on medium-high speed until creamed and well combined, about 4 minutes.

Stop, scrape down the sides of the bowl, and add the flour, pudding mix (or cornstarch), baking soda, optional salt, and beat on low speed until just combined, about 1 minute.

Stop, scrape down the sides of the bowl, and add the chocolate chips, 3/4 cup M&Ms, and beat on low speed until just combined, about 30 seconds.

Using a large cookie scoop, 1/4-cup measure, or your hands, form 15 equal-sized mounds of dough, roll into balls, and flatten slightly.

Add about 1 tablespoon M&Ms to the top of each dough mound.

Place mounds on a large plate or tray, cover with plasticwrap, and refrigerate for at least 2 hours, up to 5 days. Do not bake with unchilled dough because cookies will bake thinner, flatter, and be more prone to spreading.

Preheat oven to 350F, line a baking sheet with a Silpat or spray with cooking spray. Place dough mounds on baking sheet, spaced at least 2 inches apart (I bake 8 cookies per sheet) and bake for 11 minutes, or until edges have set and tops are just set, even if slightly undercooked, pale, and glossy in the center. Cookies firm up as they cool. Allow cookies to cool on baking sheet for about 10 minutes before serving. I let them cool on the baking sheet and don’t use a rack.

Cookies will keep airtight at room temperature for up to 1 week or in the freezer for up to 6 months. Alternatively, unbaked cookie dough can be stored in an airtight container in the refrigerator for up to 5 days, so consider baking only as many cookies as desired and save the remaining dough to be baked in the future when desired.

Pink + Grey

Pink and grey is one of my favorite color combos. Especially when it’s in these soft shades. I passed a maternity sale rack at Macy’s last week and I caved and bought a few pieces. I didn’t feel all that guilty buying them when I was able to get a pretty good bargain. I also realized that I still have 3 months left in this pregnancy and rotating between a few pairs of pants is driving me crazy! As much as I want to throw on leggings every single day (and trust me I do while I’m home), I’m doing my best to pull myself together while I’m out. Having this blog, which I didn’t have during my other pregnancies, also holds me accountable. So thanks, I think, for that ;)

High Five for Friday

What a week! I see that those of you out west have been enjoying some pretty decent weather while those of us on the east coast have had quite a different story. We started off the week with two snow days and a lot of effort on my part to keep my two little ones entertained. Jack lost his second tooth (which is big news in a 5 year old’s life) and the tooth fairy was close to getting busted! That’s no small task she has. Madelyn worked with me to make space for ‘baby sister’ and I was reminiscing as we pulled out her old newborn clothing. I’ve had a number of dreams of the baby arriving early, which is hopefully just a part of me feeling totally unprepared for this child. Thankfully babies never know how prepared we are. All they need is our unconditional love, and that I’m positive she’ll receive in overwhelming amounts!

Here’s a look back on our week:

1) We’re working our outfits together for my SIL’s wedding in March. We’re also working on Jack’s ‘thank-you smile’ when people compliment how handsome he is. It’s a much better response than his roll of the eyes! You can find his suit here for a pretty decent sale price.

2) My sister has begun selling Stella & Dot jewelry which means my collection has no choice but to grow! These are two pieces that should be arriving any day from their new spring line. You know me and pastels! How pretty are they?!

3) Our fort creation during snow day #1. I am no architect, but I’d sure enjoy decorating the interior :)

4) One of my most favorite people sent not one, but two of these dresses for Madelyn and baby-to-be. They are the sweetest things!! You can check out this dress and more from Arrow and Lace here.

Out with the Old

And by out, I literally mean digging it out of your closet. At this point in the winter, I tend to become bored with any purchases I made at the begin of the season. Maybe not bored necessarily, but I realize what I’ve been over-wearing as winter continues to drag on. That’s when I start to dig and find some of my favorite items from years past. Do any of you remember shopping at RUGBY by Ralph Lauren before they discontinued the line? I was a huge fan and very disappointed when they closed up shop. This cardigan was from them and I loved it so much that I also have it in lavender. It’s a great classic piece that’s held up over time and I get excited to rediscover it year after year. Granted the store has since closed, but I have linked some similar options for you to check out below. Any items in particular that you find yourself returning to every year?

It’a hard to believe Valentine’s Day is approaching so quickly. Although my husband stole my heart long ago, it’s most certainly shared with my children. I enjoy playing up the holiday (although I typically forbid my husband from paying for over-priced flowers the day-of) and love dressing them up in appropriate apparel and gifting them a little something. I’ve gathered some ideas to share with you for your young ones. For those with teens, I’m not sure they’d let you dress them up in hearts…so you’ll have to fill me in there!

Avocado Chicken Sandwich

I realize that I should be posting some overindulgent recipes for you all to enjoy during the Superbowl this weekend, but I hope you’re not too disappointed. Let’s think of this as the healthy lunch you could enjoy prior to your overindulging later that evening? I’ve been seeing a lot of versions of this recipe going around lately, so obviously it’s quite versatile depending on your particular tastes. It’s become a go-to for our lunches lately…and sometimes dinner too!

Although you could certainly poach some chicken, using a rotisserie chicken makes this a no-brainer.

Avocado Chicken Sandwich adapted from this recipe:

Ingredients:

2 C shredded chicken (I use rotisserie)
1 avocado (cored and mashed)
1/4 C chopped cilantro
2 Tbsp light mayo
Seasoned salt (we love Tastefully Simple’s)
Bread or rolls

Directions:

-Mix chicken, avocado, cilantro, mayo and salt in a bowl until well combined.

-Serve on bread or roll.

 

In the Wild

After purchasing and becoming quite fond of this sweater coat, I knew it would be beneficial to add more to my closet. What I love about this one (in addition to the colors) is that it is perfect for fall, winter and spring and I look forward to putting it to use! I also love the play on animal print in the softest of colors. It was so peaceful and serene when we shot this look and it felt appropriate that we saw the most beautiful hawk perched on a post as we drove out. It flew away just before we could get a good shot of it. Camera shy I suppose ;)
