Banana bread is very popular in our home. My kids eat a lot of bananas but it never fails that we’ll have a few overly ripe bananas going to waste. That’s the point that I toss them in a bowl and whip up a loaf of bread. Now, I titled this ‘Mom’s Banana Bread’ because technically this is the recipe I grew up on. My mother is is creative in many ways, but recipe creation is not one of them (I love you, Mom!). All I am saying is that this recipe did stem from someone, somewhere, but the only credit I can give is back to my mom’s kitchen. You can vary the recipe by adding nuts or chocolate chips depending on your families preferences. I also tend to break up the flour and use at least half whole wheat. Banana Bread:
Ingredients:
- 3 overly ripe bananas
- 1 C sugar
- 1 egg
- 1 1/2 C flour
- 1/4 C melted butter
- 1 tsp salt
- 1 tsp baking soda
Directions:
- Preheat oven to 325 degrees
- Mash bananas in a medium sized bowl with a fork
- Add in all other ingredients and stir just until all ingredients are mixed
- Bake in preheated oven for 60 min or until golden brown and a toothpick inserted comes out clean
