I hope you all had a great weekend, we sure did! We spent ours with my husband’s family all gathered together in the Poconos. I volunteered to make breakfast as I secretly needed an excuse to make this baked french toast. The recipe comes from a good friend of mine who we’d often beg to make this for us when we’d get together. It’s great to prep the night before and then just pop in the oven the next morning. You may want to invite company because it’s easy to over-indulge ;)
1 stick butter
3/4 C sugar
2 Tbsp corn syrup
french bread (1 – 1.5 loaves)
1.5 C milk or half and half
1 tsp vanilla
1 tsp Grand Marnier (optional)
1/4 tsp salt
Melt butter, sugar and corn syrup in saucepan stirring till smooth. Pour into 13 by 9 by 2 inch baking dish. Cut 1 inch thick slices of french bread (stale is fine) and arrange in baking dish squeezing tight to make them fit. In a bowl whisk eggs, milk or half and half, vanilla, Grand Marnier (optional), salt. Pour over bread. Chill it overnight. Preheat oven to 350 and bring bread to room temperature. Bake uncovered 35-40 minutes until puffed and edges are golden.
