High Five for Friday

Hope you guys had a great week! It felt like a whirlwind to me and overall I’m pretty exhausted. It never fails that just as I crash into my bed, the littlest babe decides it’s her time to have my attention. Well she certainly has it! We’re down to less than 3 months until we meet her and we’re all getting pretty excited. Overwhelmed too, don’t get me wrong. This house is going to go from crazy to insane in no time, but we’ll be jumping in, ready or not! I also registered Madelyn for preschool next year. Just a few mornings per week but I still can’t get over the fact that she’ll be old enough for school. We’ve basically tackled potty training this past week however, so she’s proving herself to be quite the ‘big girl’. Now, back to appreciating the little once bouncing around inside ;)

Despite my excitement yesterday for spring weather, the reality remains that winter accessories are still a must. This has most definitely been a go-to outfit of mine lately. Perfectly casual and comfortable, and great for chasing around my kids and running errands. For those of you that get (yes, get) to dress up for work during the week, this could be something you turn to during the weekend. Distressed denim and a sweatshirt, a match made in heaven.

Who’s Ready for Spring?

It makes me laugh as I think back a few months to October and how anxious I was to layer with coats and scarves and all the fun winter accessories. Can I just tell you how over it all I am? I realize these items will remain necessary for a bit longer, for those of us in the northeast at least, but that doesn’t mean I can’t start my spring planning. I recently worked together some outfit boards for a friend of mine who has an upcoming trip to CA. Obviously this has triggered my eagerness for the next season to arrive.

Jackets are always a good starting point when it comes to spring weather. There’s such a wide variety to choose from including anoraks, trenches, denim, moto and everything in between. Below are a few that have caught my eye thus far, although new spring lines are being released daily, so I’m sure this won’t be the end of  cute, stylish options for the season!

Three Ingredient Pancakes

Three, yes three, ingredients and Bisquick isn’t one of them ;) Would you believe that you can make amazing pancakes made of banana, egg and chia seeds? I wasn’t sure I believed it either until I tried it, and it’s true. With these staple ingredients on hand, it takes little more than a quick blend and a hot griddle to whip up these healthy, delicious pancakes for your family any morning of the week. I don’t have much else to say other than go give them a shot. I have a feeling you’ll be pleasantly surprised!

Recipe via The Skinny Confidential:

Ingredients:

2 eggs
1 banana
1 or 2 scoops of chia seeds

Directions:

Blend above ingredients together.

Warm non stick pan to medium heat and add a little coconut oil to pan.

Cook silver dollar size pancakes about 30 seconds on each side. Add cinnamon if desired.

A Night Out

This past weekend we celebrated my sister-in-law with a mini-bachelorette party. Her wedding is a mere 6 weeks away and we’re all extremely excited for it. She has a great group of girlfriends and I think our laughter filled the room the entire evening. After gathering at one of the ladies’ homes, we headed to a Hibachi grill and had an amazing evening. After stressing for a moment about what to wear to such an event at 27 weeks pregnant, I knew throwing on this sleek tuxedo blazer, some skinnies, and breaking in these silver pumps that I plan on wearing for her wedding, were the perfect option.

High Five for Friday

Happy Friday! It’s been a pretty frigid week around here, but moving into February, I know spring is on the way….eventually. As for the fam, I had a check-up this week and baby Z is doing well and right on track. Big brother is losing teeth and starting to (slowly) read books on his own and big sister is on the road to being potty trained. I have heard so many people say that girls are easier to train than boys. I beg to differ. Jack was trained in one quick weekend. He literally wet his pants one time in the process and that was that. Miss Madelyn, on the other hand, has a mind of her own. I think our extreme celebrations (ie her brother and I jumping around like maniacs every time she uses the potty and stays dry during nap-time) are starting to win her over. Stay tuned, she’s a work in progress!

2) Nearly 27 weeks, closing in on the third trimester and trying to get my feet up every once in a while. Potty training a 2.5 year old is certainly keeping me on my feet more than I’d like, but it needs to be done!

4) My favorite kind of shopping is finding little gems when I’m not looking for them. We all know when you are looking for them, you never find them! These cute cards (which are inspiring me to send some out of the blue hello’s) and passport case were snagged at Home Goods this week. Now I just need some plans that involve putting my passport to use again ;)

Well ladies, Valentine’s Day is nearly upon us. I rounded up a few goodies that have recently caught my eye. I figure if I have it on here my husband may get the hint ;) Feel free to forward it on to your significant other as well. Subtle hints tend to work and they can still take the credit ;) And for all of my single lady friends, there’s never any harm in treating yourself to a little something!

Valentine Cookies

Valentine’s Day is a classic holiday to share sweets with those you love. There are a million treats and candies to choose from, but you can never go wrong with a classic cookie. This recipe adds some pudding mix to keep the cookies soft and chewy…and delicious. And the M&M’s add the perfect flair for the holiday. As I was eating them I couldn’t help but wish I had used peanut-butter M&M’s. Maybe a pregnancy craving? If you try them that way, let me know how they turn out!

Here’s the recipe via Averie Cooks:

M&M Chocolate Chip Cookies:

INGREDIENTS:

3/4 cup unsalted butter, softened (1 1/2 sticks)
3/4 cup light brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 cup instant vanilla pudding mix (not sugar-free and not ‘cook & serve’), OR use 2 teaspoons cornstarch in place of pudding mix
1 teaspoon baking soda
pinch salt, optional and to taste
3/4 cup semi-sweet chocolate chips
3/4 cup milk chocolate M&M’s mixed into the dough + about 1/2 cup for placing on top of dough mounds

DIRECTIONS:

To the bowl of a stand mixer fitted with the paddle attachment (or large mixing bowl and electric mixer) combine the butter, sugars, egg, vanilla, and beat on medium-high speed until creamed and well combined, about 4 minutes.

Stop, scrape down the sides of the bowl, and add the flour, pudding mix (or cornstarch), baking soda, optional salt, and beat on low speed until just combined, about 1 minute.

Stop, scrape down the sides of the bowl, and add the chocolate chips, 3/4 cup M&Ms, and beat on low speed until just combined, about 30 seconds.

Using a large cookie scoop, 1/4-cup measure, or your hands, form 15 equal-sized mounds of dough, roll into balls, and flatten slightly.

Add about 1 tablespoon M&Ms to the top of each dough mound.

Place mounds on a large plate or tray, cover with plasticwrap, and refrigerate for at least 2 hours, up to 5 days. Do not bake with unchilled dough because cookies will bake thinner, flatter, and be more prone to spreading.

Preheat oven to 350F, line a baking sheet with a Silpat or spray with cooking spray. Place dough mounds on baking sheet, spaced at least 2 inches apart (I bake 8 cookies per sheet) and bake for 11 minutes, or until edges have set and tops are just set, even if slightly undercooked, pale, and glossy in the center. Cookies firm up as they cool. Allow cookies to cool on baking sheet for about 10 minutes before serving. I let them cool on the baking sheet and don’t use a rack.

Cookies will keep airtight at room temperature for up to 1 week or in the freezer for up to 6 months. Alternatively, unbaked cookie dough can be stored in an airtight container in the refrigerator for up to 5 days, so consider baking only as many cookies as desired and save the remaining dough to be baked in the future when desired.

Pink + Grey

Pink and grey is one of my favorite color combos. Especially when it’s in these soft shades. I passed a maternity sale rack at Macy’s last week and I caved and bought a few pieces. I didn’t feel all that guilty buying them when I was able to get a pretty good bargain. I also realized that I still have 3 months left in this pregnancy and rotating between a few pairs of pants is driving me crazy! As much as I want to throw on leggings every single day (and trust me I do while I’m home), I’m doing my best to pull myself together while I’m out. Having this blog, which I didn’t have during my other pregnancies, also holds me accountable. So thanks, I think, for that ;)
